Sesame Ginger Tofu Noodle Bowl

Ingredients
- 8 oz of firm tofu, cubed
- 8 oz of rice noodles
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey
- 1 teaspoon of fresh ginger, grated
- 1/2 cup of red bell pepper, thinly sliced
- 1/2 cup of carrots, julienned
- 1/2 cup of cucumber, thinly sliced
- 2 tablespoons of sesame seeds
- Fresh cilantro for garnish
Instructions
- In a large pot, cook the rice noodles according to the package instructions. Drain and set aside.
- In a pan, heat 1 tablespoon of sesame oil over medium-high heat. Add the tofu cubes and cook until they are golden brown on all sides. Remove from the pan and set aside.
- In the same pan, add the remaining sesame oil and minced garlic. Sautรฉ for a minute until fragrant.
- Whisk together soy sauce, rice vinegar, honey, and grated ginger in a small bowl. Pour this mixture into the pan with garlic and sesame oil. Stir and let it simmer for a couple of minutes.
- Return the cooked tofu to the pan, coating it with the sauce.
- Toss the cooked rice noodles, red bell pepper, carrots, and cucumber in the pan with the tofu and sauce. Stir-fry for another 2-3 minutes until everything is heated through.
