Ingredients

  • 2 large zucchinis, spiralized into noodles
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/4 cup grated Parmesan cheese
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a food processor, combine basil, pine nuts, garlic, Parmesan cheese, lemon juice, salt, and pepper. Pulse until well combined.
  2. With the food processor running, drizzle in the olive oil until the pesto reaches your desired consistency. Set aside.
  3. Heat a tablespoon of olive oil in a pan over medium heat. Add cherry tomatoes and sautรฉ until they soften, about 3-4 minutes.
  4. Add zucchini noodles to the pan and toss gently for 2-3 minutes until heated through but still al dente.
  5. Remove from heat and toss the zoodles with the prepared pesto sauce until well coated.
  6. Serve immediately, garnished with additional Parmesan cheese and fresh basil leaves if desired.
