Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. In a large skillet, sautรฉ the chopped onion and garlic until they become translucent.
  3. Add the shredded beef, ground cumin, chili powder, salt, and pepper to the skillet. Cook until the beef is heated through and well coated with the spices.
  4. Warm the corn tortillas in a microwave for about 20 seconds, or until they become pliable.
  5. Spread a spoonful of enchilada sauce on each tortilla.
  6. Place a portion of the beef mixture and a sprinkle of both cheddar and monterey jack cheese on each tortilla.
  7. Roll up the tortillas and place them seam side down in a baking dish.
  8. Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
