Ingredients

  • 6 large eggs

Instructions

  1. Place the eggs in a single layer in a saucepan and cover with water. Bring to a boil over medium-high heat. Once boiling, remove from heat and cover. Let the eggs sit in hot water for 10-12 minutes.
  2. Transfer the eggs to an ice bath to cool completely. Once cooled, carefully peel the eggs and cut them in half lengthwise.
  3. Remove the yolks and place them in a bowl. Mash the yolks with a fork and mix in mayonnaise, Sriracha sauce, Dijon mustard, salt, and pepper until smooth.
  4. Spoon or pipe the yolk mixture back into the egg white halves.
  5. Garnish with paprika and chopped chives.
  6. Refrigerate for at least 30 minutes before serving.
