Instructions

  1. Soak the rice noodles in hot water for about 8 minutes or until they are tender but still firm. Drain and set aside.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the minced garlic and cubed tofu, stir-frying for 2-3 minutes until the tofu is golden.
  3. Push the tofu and garlic to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked.
  4. Add the soaked noodles to the wok and toss them with the tofu, garlic, and eggs.
  5. Stir in the bean sprouts, crushed peanuts, and chopped green onions.
  6. In a small bowl, mix together the fish sauce, tamarind paste, sugar, and red pepper flakes. Pour this sauce over the noodles and toss everything together.
  7. Cook for an additional 2-3 minutes until everything is heated through and well combined.
