  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • For the dressing:
