Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, thinly sliced
  • 2 cups (240g) broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1-inch (2.5 cm) piece of ginger, grated
  • ยผ cup (60ml) soy sauce
  • 2 tablespoons (30ml) oyster sauce
  • 2 tablespoons (30ml) vegetable oil
  • 2 cups (400g) cooked rice for serving
  • Salt and pepper to taste

Instructions

  1. Start by preparing the sauce. In a small bowl, mix the soy sauce and oyster sauce. Set aside.
  2. Heat a wok or a large skillet over medium-high heat. Add vegetable oil and swirl to coat the pan.
  3. Add the sliced chicken and stir-fry for 2-3 minutes until it’s no longer pink in the center. Remove the chicken from the wok and set aside.
  4. In the same wok, add a bit more oil if needed and stir-fry the garlic and ginger until fragrant.
  5. Add all the vegetables – broccoli, red bell pepper, yellow bell pepper, and carrot. Stir-fry for 3-4 minutes until they are slightly tender but still crisp.
  6. Return the cooked chicken to the wok and pour the sauce over the ingredients. Stir well to combine and cook for an additional 2 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the stir-fry over cooked rice and enjoy!
