- 3 cloves garlic, minced
- 1-inch (2.5 cm) piece of ginger, grated
- ยผ cup (60ml) soy sauce
- 2 tablespoons (30ml) oyster sauce
- 2 tablespoons (30ml) vegetable oil
- 2 cups (400g) cooked rice for serving
- Salt and pepper to taste
Instructions
- Start by preparing the sauce. In a small bowl, mix the soy sauce and oyster sauce. Set aside.
- Heat a wok or a large skillet over medium-high heat. Add vegetable oil and swirl to coat the pan.
- Add the sliced chicken and stir-fry for 2-3 minutes until it’s no longer pink in the center. Remove the chicken from the wok and set aside.
- In the same wok, add a bit more oil if needed and stir-fry the garlic and ginger until fragrant.
- Add all the vegetables – broccoli, red bell pepper, yellow bell pepper, and carrot. Stir-fry for 3-4 minutes until they are slightly tender but still crisp.
- Return the cooked chicken to the wok and pour the sauce over the ingredients. Stir well to combine and cook for an additional 2 minutes.
- Season with salt and pepper to taste.
- Serve the stir-fry over cooked rice and enjoy!
