Ingredients
- 1 cup long-grain white rice
- 1 pound boneless, skinless chicken thighs, diced
- 1/2 pound Andouille sausage, sliced
- 1/2 pound large shrimp, peeled and deveined
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can (14 ounces) diced tomatoes
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
Instructions
- In a large Dutch oven, heat some oil over medium-high heat. Add the chicken and sausage, and cook until browned.

- Remove from heat and let it sit for a few minutes before serving.
