Cajun Jambalaya is a flavorful, spicy one-pot dish that’s a true taste of Louisiana. It’s a symphony of flavors, with tender chicken, succulent shrimp, and spicy Andouille sausage combined with rice and a blend of Cajun spices. This hearty dish is perfect for gatherings or a cozy family dinner.

Ingredients

  • 1 cup long-grain white rice
  • 1 pound boneless, skinless chicken thighs, diced
  • 1/2 pound Andouille sausage, sliced
  • 1/2 pound large shrimp, peeled and deveined
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14 ounces) diced tomatoes
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, heat some oil over medium-high heat. Add the chicken and sausage, and cook until browned.
  2. Add the onion, bell pepper, and garlic. Sautรฉ until the vegetables are softened.
  3. Stir in the rice, diced tomatoes, chicken broth, and Cajun seasoning. Bring to a boil.
  4. Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender.
  5. Stir in the shrimp and cook until they turn pink and opaque.
  6. Season with salt and pepper to taste.
  7. Remove from heat and let it sit for a few minutes before serving.
