Sesame Ginger Tofu Noodle Bowl

If you’re looking for a quick and delicious Asian-inspired meal, this Sesame Ginger Tofu Noodle Bowl is the perfect choice. Packed with flavors and textures, it’s a satisfying dish that’s both healthy and easy to make.

Ingredients

  • 8 oz of firm tofu, cubed
  • 8 oz of rice noodles
  • 2 tablespoons of sesame oil
  • 2 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of honey
  • 1 teaspoon of fresh ginger, grated
  • 1/2 cup of red bell pepper, thinly sliced
  • 1/2 cup of carrots, julienned
  • 1/2 cup of cucumber, thinly sliced
  • 2 tablespoons of sesame seeds
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a pan, heat 1 tablespoon of sesame oil over medium-high heat. Add the tofu cubes and cook until they are golden brown on all sides. Remove from the pan and set aside.
  3. In the same pan, add the remaining sesame oil and minced garlic. Sautรฉ for a minute until fragrant.
  4. Whisk together soy sauce, rice vinegar, honey, and grated ginger in a small bowl. Pour this mixture into the pan with garlic and sesame oil. Stir and let it simmer for a couple of minutes.
  5. Return the cooked tofu to the pan, coating it with the sauce.
  6. Toss the cooked rice noodles, red bell pepper, carrots, and cucumber in the pan with the tofu and sauce. Stir-fry for another 2-3 minutes until everything is heated through.
  7. Serve your Sesame Ginger Tofu Noodle Bowl hot, garnished with sesame seeds and fresh cilantro.
