Vegan Spinach Lasagna

Ingredients
- 9 lasagna noodles
- 5 cups fresh spinach leaves

Instructions
- Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
- In a large skillet, sautรฉ the minced garlic in a bit of olive oil until fragrant.
- Add the fresh spinach leaves and cook until wilted. Season with salt and pepper. Remove from heat and set aside.
- In a bowl, mix the vegan ricotta cheese with dried oregano and basil. Season with salt and pepper to taste.
- Preheat your oven to 375ยฐF (190ยฐC).
- Assemble the lasagna by spreading a thin layer of tomato sauce in the bottom of a baking dish. Place three lasagna noodles on top.
- Add a layer of sautรฉed spinach, followed by a layer of vegan ricotta mixture and a sprinkle of vegan mozzarella cheese. Repeat the layers until you run out of ingredients, finishing with a layer of vegan mozzarella cheese on top.
- Drizzle almond milk over the lasagna to keep it moist.
- Cover the baking dish with foil and bake for 25-30 minutes, removing the foil for the last 10 minutes to allow the top to brown.
- Remove from the oven and let it cool for a few minutes before serving.
