Vegetable Lasagna: Comfort Food Elevated

Picture this: a steaming hot plate of vegetable lasagna, fresh out of the oven, with layers of vibrant vegetables, rich tomato sauce, and creamy bรฉchamel. It’s a dish that elevates comfort food to new heights and tantalizes your taste buds with each bite.

Ingredients

  • 9 lasagna noodles
  • 2 cups of ricotta cheese
  • 1 cup of grated mozzarella cheese
  • 1 cup of grated Parmesan cheese
  • 2 cups of fresh spinach, chopped
  • 1 cup of zucchini, thinly sliced
  • 1 cup of mushrooms, sliced
  • 1 cup of bell peppers, diced
  • 2 cups of marinara sauce
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  2. In a large bowl, combine the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, chopped spinach, and salt and pepper. Mix well.
  3. In a skillet, sautรฉ the garlic, zucchini, mushrooms, and bell peppers until they’re tender. Season with dried basil and oregano.
  4. Preheat your oven to 375ยฐF (190ยฐC).
  5. Spread a thin layer of marinara sauce in the bottom of a 9×13-inch baking dish.
  6. Place three lasagna noodles on top of the sauce.
  7. Spread half of the ricotta mixture over the noodles.
  8. Add half of the sautรฉed vegetables on top of the ricotta mixture.
  9. Repeat the layers: marinara sauce, three noodles, remaining ricotta mixture, and remaining sautรฉed vegetables.
  10. Top with the remaining mozzarella and Parmesan cheeses.
  11. Cover the baking dish with foil and bake for 25 minutes.
  12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  13. Let it cool for a few minutes, then slice and serve your Vegetable Lasagna, the ultimate comfort food elevated!
