8 deseeded and stems removed Guajillo Chilis
6 deseeded and stems removed chili de arbol
4 deseeded and stems removed ancho chili
6 cloves Garlic
1 Large white Onion
1 tbsp Mexican Oregano
1/2 tsp cumin
Salt
Pepper
5 pounds of cubed chuck Beef
4 cups Beef Stock
1/2 cup Flour
4 tbsp Cooking Oil
3 Bay leaves

Mexican chili Colorado Recipe

Chili Colorado with a side of Mexican rice and beans

Heat a cast iron pan. Lightly roast the dried chilis. This takes just a minute, don't over roast or your sauce will be bitter (you can fix this with a small dollop of tomatoe paste.)

Put the roasted chilis in boiling water and let boil for 10 minutes.

Put onion, garlic, Mexican oregano and cumin in a blender. Add chllis and two cups of the stock. Puree.

You can strain the sauce of you want to. I personally don't. Put sauce to the side.

Season beef cube pieces with salt and pepper thoroughly. Add flour and coat the meat.

Warm oil in a deep cast iron pan and brown the meat, but don't cook it all the way through. Put to the side.

In the same pan, add chili puree.

Add remaining two cups of stock and bay leaves. Bring to a boil.

Add meat making sure to get all the juices that collected in the bowl from the meat.

Reduce heat to low and let simmer uncovered for about 45 minutes

If the chili is too watery for your taste.you can add flour, one tablespoon at a time to thicken it up.

Add salt to taste.
Eat with flour tortillas, Mexican rice and beans
